This is our simplest kraut of the bunch: just cabbage, salt and water. The difference between this plain kraut and what everyone else makes is the CRUNCH! You know how most of the sauerkraut you come across looks like thin limp shreds? Well, we slice ours by hand into larger chunks and it stays super-crunchy! Cabbage is an excellent source of vitamin K, vitamin C and vitamin B6. It is also a very good source of manganese, dietary fiber, potassium, vitamin B1, folate and copper. Additionally, cabbage is a good source of choline, phosphorus, vitamin B2,magnesium, calcium, selenium, iron, pantothenic acid, protein and niacin. When it is fermented, all those nutrients become much more bio-available. It contains powerful antioxidants like vitamins A and C and phytonutrients such as thiocyanates, lutein,zeaxanthin, isothiocyanates and sulforaphane, which stimulate detoxifying enzymes.
